Taco Salad

You may or may not have noticed that I have been very inconsistent over the last few months in regards to posting and new content. Well I will fill you in on the mishaps that have thrown my “posting” schedule a little out the window. I had spent a solid few weekends putting together a LOT of posts, it varied from articles, to photos, to recipes, to my home projects, travel, ebooks and more. I had drafted most of the information, including photos and a set release date… my ducks were all lined up and ready to go, especially considering I knew I had a busy spring and summer coming up. I saved the content to my desktop in draft form as WELL as on the app I use for creating blog posts. Then one day as I was slightly adjusting the timing of the posts, to adjust for my site activity, my computer crashed…. At first I was not worried, I was sure I could recover the content, however after many hours, and many glasses of wine, I was unable to recover most of the work (I was mostly able to recover the article titles and a few photos). At that point I had decided blogging and I needed a much needed “break”. I have s major LOVE/ hate with technology. That is the story of why the past 4 months, I have been posting so sporadically.

AND here we are almost in June, and although I still do not have a schedule, plan or targets in place for the site. I sure hope that you still enjoy seeing posts from Simply Nourished pop up now and again as I will likely continue with the sporadic schedule until the fall. Thanks for understanding!

AND for what brought you all here… recipes! Our household has been digging enjoying a fresh salads out on the deck! Its the perfect time of year to start planting edible flower beds and pots, including herbs, lettuce, arugula and anything you can easily add to your dishes! Prepping salads in bulk and storing in the fridge means you can easily grab one for lunch or even at supper time and not have to waste any of the precious “sunshine” time inside or in the kitchen!
